Descripción:(2S,3S)-2-Hydroxy-3-methylpentanoic acid (HMP) is an antimicrobial agent that functions by binding to metal ions in the bacterial cell wall and inhibiting their uptake. HMP also has a beneficial effect on insulin sensitivity. It has been shown that HMP binds to the amino acid lysine residues of proteins and inhibits protein degradation by corynebacterium glutamicum. This compound can be found in food products such as cheese and yogurt, but it is not known if it occurs naturally or is added during processing.
