Methyl 2-(4-hydroxyphenoxy)propanoate is a postulated cancer agent that has been shown to be noncatalytic and can be used as a solvent for the extraction of lipids. This compound is also used in food chemistry, where it is employed in the production of flavors and fragrances, as well as pesticide formulations. Methyl 2-(4-hydroxyphenoxy)propanoate is a contaminant that can be found in some alcoholic beverages. It reacts with chloride ions to form methyl chloride, which is subsequently hydrolyzed to form hydrogen chloride and fatty acids.
