Benzoic acid is a carboxylic acid that has been shown to have antimicrobial and antifungal properties. It is also used as a preservative in many food products. Benzoic acid inhibits the growth of bacteria by interfering with enzyme activity, such as pyrazinoic acid, benzoate, and p-hydroxybenzoic acid. It also binds to DNA and RNA, inhibiting protein synthesis. The optimum concentration for benzoic acid is between 0.1-0.5%.
