The antimicrobial activity of taxifolin 7-O-rhamnoside may be due to its ability to inhibit bacterial cell wall synthesis, leading to cell death. Taxifolin 7-O-rhamnoside has also been shown to have anti-inflammatory properties and has potential as a therapeutic agent in autoimmune diseases and cancer. This compound is extracted from the leaves of solanum tuberosum (potato) by acid hydrolysis or chemical treatment with sulfuric acid.
