2-Ethoxy-4-formylphenyl isobutyrate is a sweetener that has been shown to be orally active. It is also used in the production of sodium propionate and potassium butyrate. 2-Ethoxy-4-formylphenyl isobutyrate has a bitter taste and an astringent, fatty acid, and isobutyric acid odor. The compound can be synthesized from eriodictyol and n-hexane. 2-Ethoxy-4-formylphenyl isobutyrate can be found in some artificial flavorings and maltol, which gives a sweet vanilla flavor to foods.
