Crocin I is a natural compound that has been shown to have antioxidant properties. It scavenges anion radicals and protects cells against oxidative damage. Crocin I is found in the petals of the gardenia plant, commonly known as gardenia yellow. Gardenias produce crocetin, which can be converted to crocin, which provides color and flavor to the flowers. Crocins are carotenoids that are found in many plants and fruits such as carrots, tomatoes, oranges, and peaches. They are used as food coloring agents because they are fat-soluble pigments with a yellow color. In vitro assays show that crocin may have synergistic effects with other antioxidants such as vitamin E or beta-carotene.
