Cyclodextrins are cyclic oligosaccharides composed of six, seven, or eight glucose units. They form when a growing polysaccharide chain twists to form a ring. Cyclodextrins have been used as carriers for drugs and other compounds that are not soluble in water because they can form complexes with hydrophobic molecules. One example is eta-cyclodextrin, which is a mutant of alpha-cyclodextrin and has an increased affinity for hydrophobic molecules. Eta-cyclodextrin has been shown to bind proteins more tightly than alpha-cyclodextrin, but less tightly than beta-cyclodextrin. The active site of the enzyme is the place on the surface where substrate binds to produce a chemical reaction. The residues at the active site are acid sequences that can be substituted with different amino acids without affecting the enzyme's function.
