Rebaudioside B is a non-caloric artificial sweetener that is approved by the U.S. Food and Drug Administration (FDA). It has been shown to promote the growth of probiotic bacteria in the intestines after oral administration, which can help to maintain a healthy gut environment. Rebaudioside B is also used as an analytical reagent for measuring acidity and for determining molecular weights. The molecular formula for Rebaudioside B is C14H22O11, with an empirical formula of C14H22O11·H2O and a molecular weight of 342.34 g/mol. This compound has two ester linkages between its sugar residues and one hydroxyl group on each sugar residue. It is a white crystalline powder that is soluble in water, but insoluble in ethanol or ether.
