This compound binds to proteins that contain aromatic amino acids. 7,22,25-Stigmastatrienol has been found to have substituent effects on the enzyme activity that catalyzes the conversion of cholesterol into bile acid. The structural factors that determine its binding affinity to proteins are not well understood.
