(E)-5-Octen-2-ol is an organic compound with the formula CH=CHCOH. It is a colorless liquid that has a pleasant, fruity odor. It is used as an intermediate in organic synthesis, notably in the production of vitamin E and some flavors and fragrances. (E)-5-Octen-2-ol can be produced by hydrogenating 2-octanone or by hydrolyzing esters of 5 octene-1,3-diol or 5 octene-1,2,3,4-tetrol. The compound exists as two stereoisomers: cis and trans.
