Trans-2-heptenyl acetate is a synthetic compound that belongs to the group of aldehydes. It has been shown to produce pheromones for filamentous fungi and plant toxins. Trans-2-heptenyl acetate has been detected in the headspace of plants, where it is produced as a result of enzyme catalysis. It is also an efficient method for extracting volatile organic compounds from food samples by solid phase microextraction. There are health effects associated with exposure to this chemical, but they are not well understood at this time.
