3-(Hydroxymethyl)-1,2-dihydropyridin-2-one is an organic compound with a phosphate group. It is used in the crystallisation of lettuce and has been synthesised using an asymmetric synthesis. 3-(Hydroxymethyl)-1,2-dihydropyridin-2-one has also been used in the production of chlorinated compounds for use as herbicides. The kinetics of 3-(Hydroxymethyl)-1,2-dihydropyridin-2-one have been studied by reacting it with spirulina and caffeic acid. This reaction resulted in the formation of a reactive intermediate that can be converted to the alcohol analogs ethanolamine or 2-(hydroxymethyl)pyridine.
