2-Heptenoic acid is a monocarboxylic acid that is found in oils of plants and animals. It can be synthetically produced or extracted from natural sources, with the latter being more common. 2-Heptenoic acid has been shown to have anti-inflammatory properties, which may be due to its ability to inhibit prostaglandin synthesis. In addition, 2-heptenoic acid has been shown to be present in the plasma and urine of humans at levels that are higher than those found in other fatty acids. This is believed to be due to its presence in tannins and saponins, which are plant natural products that have been shown to have anti-inflammatory properties.
