2-Isobutyl-3,5,6-trimethylpyrazine is a colourless liquid that has a strong flavour and odour. It is naturally occurring in many foods including potatoes and other tuberous plants. The compound is used to produce the artificial flavoring 2,5-dimethylpyrazine and it can be used as an extractive agent in food processing. It reacts with sugars to form acrylamide and this process can be accelerated by high temperatures. 2-Isobutyl-3,5,6-trimethylpyrazine has been shown to cause cancer in rats and mice when given orally or intravenously at high doses.
