Sodium 2-oxo-3-phenylpropanoate hydrate is a sodium salt that can be used as a food additive. Sodium 2-oxo-3-phenylpropanoate hydrate is not metabolized by the body and passes through the digestive system unchanged. This compound has been shown to inhibit the growth of aerobacter aerogenes bacteria in vitro, which may be due to its ability to inhibit oxidative injury. Sodium 2-oxo-3-phenylpropanoate hydrate has also been shown to have no effect on bacterial strains such as Staphylococcus aureus and Escherichia coli, which are Gram positive and Gram negative respectively.
