Hydrolyzed fumonisin B2 is a hydroxylated fatty acid with a hydroxyl group at the C-2 position. It has been shown to inhibit the growth of bacteria and fungi, both in vitro and in vivo. Hydrolyzed fumonisin B2 inhibits microsomal enzymes that normally detoxify fumonisins, which are toxic metabolites produced by certain fungi that can cause liver lesions in animals. Hydrolyzed fumonisin B2 binds to bacterial cells and inhibits their growth by blocking the synthesis of proteins. This effect may be due to its ability to inhibit microbial metabolism and prevent the production of new cells.
