Mirin is a naturally-occurring organic compound that is used as a food additive, condiment and cooking ingredient. It is produced by the hydrolysis of rice wine (sake) and contains approximately 13% alcohol. Mirin has been shown to activate receptors, such as the G protein-coupled receptor 121 (GPR121), which can lead to the release of insulin and may be useful in diabetes treatment. Mirin also inhibits ion channels, such as TRPM8, which is associated with pain sensation.
