The compound has been shown to inhibit the phosphotungstic acid catalyzed hydrogenation of unsaturated fatty acids with a low melting point. 2-Ethyl-1-hexanol inhibits mitochondrial membrane potential by binding to the hydroxyl group in the fatty acid and forming a hydrogen bond interaction. 2-Ethyl-1-hexanol also has toxic effects on animals, which may be due to its ability to induce symptoms such as vomiting, diarrhea, and central nervous system depression.
