Kojitetraose is a phosphorylase substrate and can be used to study thermophilic phosphorylases. It has been shown that the stereoselectivity of phosphorylases can be determined by the configuration of the glycosidic bond in the reactant or product. Structural studies have also shown that Kojitetraose binds to teichoic acid and trehalose, which are components of bacterial cell walls.
