It has been shown to form stable bilayers in water, which may be due to its ability to form hydrogen bonds with water molecules. It is also able to form self assembled monolayers at the air/water interface. This dispersive molecule has been shown in microscopy experiments to reduce the thickness of lipid bilayers by up to 50% and increase their permeability by up to ten times.
