This binding prevents the formation of 4-hydroxycinnamic acid from p-hydroxybenzoic acid, which can be toxic for humans. (E)-3,4,5-Trimethoxycinnamic Acid also has antimicrobial activity against various strains of bacteria and fungi. It is an effective agent in preventing bacterial growth on surfaces due to its matrix effect with sodium carbonate.
