3-(3,4-Dimethoxyphenyl)-L-alanine is a chiral compound that has been used in the acetylation of aldehydes. 3-(3,4-Dimethoxyphenyl)-L-alanine reacts with acetic anhydride to produce acetate esters. The enzyme Brevibacterium has been shown to be able to convert 3-(3,4-dimethoxyphenyl)-L-alanine into 3-(3,4-dimethoxyphenyl)propionic acid. This product can also be produced by acylase and lysine methyl esterase enzymes. 3-(3,4-Dimethoxyphenyl)-L-alanine is not a byproduct of the fermentation process and its presence in fermenter effluent is considered unusual.
