CAS :Applications Carnosic Acid is a phenolic component of rosemary. It acts as a potent antioxdant and also has UV protective activity. Specifically protection for UV-A radiation and damage. Carnosic Acid also inhibits the free-radical chain reaction that leads to the oxidation of fats and oils, thereby stabilizing and increasing the shelf life of meats.

One study found that carnosic acid was able to inhibit the multidrug efflux pump, which is an important mechanism of resistance in many bacterial species. Carnosic acid also showed strong binding activity with human serum albumin. Carnosic acid has been shown to have anti-inflammatory properties, reducing the production of MMP-9 and preventing kidney fibrosis in mice. This pro-apoptotic compound may be useful in treating oral pathogens, such as Streptococcus mutans, and may have potential for treating human cancers.
