Description :
Cellobiose est un disaccharide composé de deux unités de glucose liées par une liaison β-1,4-glycosidique. C'est un sucre réducteur et il est classé comme un glucide. Cellobiose se trouve généralement dans la structure de la cellulose des plantes, où il sert de bloc de construction. Il est soluble dans l'eau, et sa solubilité est influencée par la température.
