    <p>Trypsin inhibitor is a protein that is produced by the pancreas and is involved in the regulation of proteolysis. It has been found to be a major allergen in patients who are sensitive to corn. Trypsin inhibitor from corn kernels contains high levels of ammonium sulfate, which can make it resistant to degradation by enzymes. Ammonium sulfate inhibits the activity of tissue plasminogen activator (tPA), an enzyme that breaks down blood clots. Ammonium sulfate may also have antifibrinolytic properties, which could lead to lysis of red blood cells and enhanced trypsin-mediated proteolysis. Trypsin inhibitor from corn kernels can be isolated using various methods such as filtration, ion-exchange chromatography, or lectins.</p>
