Isoamyl propionate is a reactive compound that is used in the production of flavorings and fragrances. It is found naturally as an antimicrobial component of some plants, such as garlic, onion, and leek. Isoamyl propionate has been shown to have anti-infectious properties against a variety of infectious diseases. This compound reacts with metal hydroxides to form hydrogen gas and a salt. Isoamyl propionate also binds to glycol ethers, forming an ester bond that is activated by benzalkonium chloride (BAC). The reaction mechanism for this process is not yet fully understood.
