Pectolyase is a pectin-degrading enzyme that is widely used in the food industry. It has been shown to have a high resistance against detergent compositions and it degrades pectins in plants and fruits. Pectolyase can be used for removing pectins from plant tissue culture, because it is not inhibited by hydrogen fluoride, which is often used as an inhibitor of cell lysis. This enzyme also has signal-transduction properties, which are required for cellular processes such as cytosolic Ca2+ signaling, cell lysis, and protein synthesis. In addition, this enzyme has been found to be active in various biochemical reactions that involve plant physiology and insect resistance. Structural analysis of Pectolyase has revealed that this enzyme contains a catalytic domain with two domains: an N-terminal domain and a C-terminal domain.
