Stearin is a mixture of esters of glycerol and long-chain fatty acids. It can be obtained from natural sources, such as palm oil, or synthesized by the hydrogenation of vegetable oils. The ethyl esters of stearin are also known as 1,2-stearin-3-oleins. The reversed-phase hplc analysis was used to identify the structure of 1,2-stearins by comparing their retention times with those of purified standards. The enzymatic synthesis was used to confirm that the reaction products were 1,2-stearins. Polymorphs were obtained by crystallization and diffraction analysis showed that they had molecular weights around 830 g/mol.
