1,3-Stearin-2-Olein is an ester with one oleic acid and three stearic acid molecules. It is a white solid with an optimal reaction temperature of 170°C to 190°C. This compound is the reaction product of fatty acids and fatty alcohols. It is also used as a substitute for other esters (e.g., stearate) in many applications, such as in food production, cosmetics, and pharmaceuticals. 1,3-Stearin-2-Olein's resistance to thermal degradation makes it an excellent candidate for use in thermoplastic polymers. In histological analysis, this compound has been shown to be acylated with amines or thiols on the side chains of proteins or nucleic acids.
