1-O-Ethyl 4-O-(3-methylbutyl) butanedioate is a food additive that has been approved by the United States Food and Drug Administration (FDA). It is used as an artificial butter flavoring in imitation butter. 1-o-Ethyl 4-o-(3-methylbutyl) butanedioate is a white solid that is soluble in ethanol, ether, acetone, and chloroform. The compound also has a fruity odor. This product can be detected by its high concentration of volatile compounds such as malate, furfural, and ethyl esters. 1-o-Ethyl 4-o-(3-methylbutyl) butanedioate has been shown to have an amino acid composition profile similar to that of amino acids found in natural butterfat.
