Heptanetriol is an alcohol that has a molecular formula of CHOH. The molecule contains three hydroxyl groups and seven carbon atoms, with a molecular weight of 152.1 g/mol. It can be obtained by the reaction of benzaldehyde and acetone in the presence of sodium methoxide followed by acid hydrolysis. Heptanetriol is used as a solvent for organic synthesis, as well as additives to protein solutions. It has been shown to interact with bacteriochlorophyll and form micelles at high concentrations. Heptanetriol also crystallizes in the hydrogenated form, which is more soluble than the saturated form. The hydrogenation process yields heptane-1,2,3-triol (1,2,3-trihydroxypropane) and heptane-1,2-diol (1,2-dihydroxypropane).
