Acetaldehyde is a toxic and hazardous chemical that is produced as a byproduct of ethanol metabolism. Acetaldehyde is an important precursor in the synthesis of acetoacetate from two molecules of acetaldehyde. Acetaldehyde has been shown to alter mitochondrial membrane potential and the signal pathways that regulate cellular responses to oxidative stress. This may contribute to the development of alcoholic liver disease. Acetaldehyde can be measured using gas chromatography with mass spectrometry, liquid chromatography-mass spectrometry, or high performance liquid chromatography with fluorescence detection. The sample preparation for these measurements includes water vapor, acetaldehyde, and reaction solution containing rat liver microsomes or liver cells.
