Description

The antimicrobial agent 2-Amino-3,3-diphenylpropionic acid (2AP) is a synthetic diphenylalanine derivative with minimal toxicity. It inhibits the growth of bacteria by disrupting the formation of peptidoglycan in the bacterial cell wall. 2AP has shown antimicrobial activity against Gram-positive and Gram-negative bacteria and fungi in vitro. It has been shown to be stable at high temperatures, which makes it an attractive candidate for use as an antimicrobial agent in food processing applications.
