Bis(2-methyl-3-furyl)disulphide is a compound that is produced by oxidation of the parent molecule, furyl. The oxidation process may be catalyzed by vitamin B1 or other unsaturated fatty acids. Bis(2-methyl-3-furyl)disulphide has been shown to inhibit the growth of bacteria and fungi, such as Clostridium perfringens and Candida albicans. This compound also inhibits the production of butyric acid in bacterial cells and reduces the accumulation of chloride ions on cell surfaces. Bis(2-methyl-3-furyl)disulphide can be prepared using gel chromatography with chloroform as the solvent. It is a colorless liquid at room temperature and has a boiling point of 190°C.
