1-Butyl-3-methylpyridinium chloride is a viscosity stabilizer that belongs to the class of pyridinium salts. It is typically used in functional foods and pharmaceuticals as an antifungal agent. 1-Butyl-3-methylpyridinium chloride has been shown to inhibit enzyme activity, such as cellulase, by reacting with the hydroxyl group on the enzyme's active site. This reaction creates an intermediate complex that cannot be broken down. The formation of this complex inhibits bacterial growth and causes death of the bacteria.
