Copper acetate is a coordination compound that contains copper and acetate ions. Copper acetate has a redox potential of -0.7 V, which is higher than that of ferrous iron (-0.4 V). The reaction mechanism for the formation of copper acetate is as follows:
Cu++ + 2e- → Cu+ + 2e-
Cu+ + CH3COO- → Cu(CH3COO)2-
The nitrogen atoms in the molecule are responsible for the intermolecular hydrogen bonding between molecules and intramolecular hydrogen bonding within each molecule. This type of bond is important to maintain the stability of the molecule, which can be seen in its high chemical stability and thermodynamic data. Copper acetate is also an effective hypoglycemic agent because it inhibits glucose absorption in the small intestine by binding to iron, preventing its uptake into the bloodstream.
