Description

Ethyl octanoate is a fatty acid that belongs to the class of esters. It is an important component of many fruit flavors and has been used as a model system for the study of transfer reactions and enzyme activities. Ethyl octanoate is found in various types of fruits, such as apples, bananas, oranges, strawberries and tomatoes. The optimum concentration for ethyl octanoate is 1-2%. This chemical can be extracted using solid phase microextraction (SPME) and analyzed by gas chromatography-mass spectrometry (GC-MS). The GC-MS can detect ethyl octanoate at concentrations as low as 0.01 ppm.
