C.I. Food Red 14:1 is a colorant that is used in the food industry as a dye for processed meat and poultry products, as well as in some fruit-flavored drinks. The compound is also used as a marker in the detection of tooth cavities, because it reacts with caries to produce an intense red color. C.I. Food Red 14:1 can be detected by a radiation reaction or by exposure to amines that react with the hydroxy group or phosphate group on the particle surface to form a deep red-colored chromophore. This product has an average particle diameter of about 0.2 microns and is composed primarily of functional groups such as carboxylates, sulfonates, and phosphates that have been covalently bonded to the molecule's carbon backbone during synthesis.
C.I. Food Red 14:1 also has antioxidant properties due to its ability to stabilize free radicals and quench reactive oxygen species (ROS)
