Hippuryl-Phe-OH is a soybean trypsin inhibitor that has been shown to have irreversible inhibition of trypsin and other enzymes. It is active at low pH, with a ph optimum of 5.5. Hippuryl-Phe-OH binds irreversibly to the active site of enzymes, thereby preventing them from catalyzing reactions. This irreversible inhibition can be exploited for use in vitro assays as well as biological studies such as cell culture, animal models, and human serum studies.
