Description :
(S)-3-Hydroxy myristic acid methyl ester is an antioxidant that can be used in the food industry. It has been found to be bacterially catalysed, which means that it is hydrolyzed by lipase. The reaction time for (S)-3-Hydroxy myristic acid methyl ester is short, and this product has not been found to react with porcine pancreas unreacted. It is a chiral molecule and its enantiomers have been synthesised through an enantioselective synthesis. The enantiomers of (S)-3-Hydroxy myristic acid methyl ester are optically active, meaning that their molecules rotate light to the left or right.
