Heptanoic anhydride is a fatty acid, which is the simplest member of the class of acyl halides. It has been shown to bind to a number of receptors and ion channels. The binding of heptanoic anhydride to these targets may be due to its hydroxyl group, which is capable of hydrogen bonding with polar groups. Heptanoic anhydride has been used in 2-D nuclear magnetic resonance studies as a probe for studying the mechanism of receptor binding. The thermal expansion coefficient for heptanoic anhydride has been determined by differential scanning calorimetry and found to be 9°C/mole at 20°C. Heptanoic anhydride has also been shown to react with cellulose in crystalline form and produce acylated cellulose via esterification reactions. The reaction is pH-dependent and proceeds best at neutral pH values.br>Heptanoic anhydride is not active
