Description

2-Isopropyl-5-methylpyrazine is an organic acid that can be produced synthetically or isolated from various plants. It is a secondary metabolite of fungi and bacteria, which can be found in composts, decaying plants, and soil. 2-Isopropyl-5-methylpyrazine has a variety of uses, including as a food flavoring agent and as an intermediate in the production of other chemicals. 2-Isopropyl-5-methylpyrazine has shown resistance to chemical degradation by air oxidation and microbial transformation. This compound is also resistant to tryptic digestion and it decomposes at elevated temperatures.
