Lutein is a carotenoid that is found in high concentrations in the retina of the eye. It is also found in other tissues and fluids, including human serum. Lutein has been shown to have antioxidant properties and may help prevent or slow the progression of age-related macular degeneration. Lutein can be found in the form of bound compounds or as free forms. The bound form is more easily absorbed by living organisms, while the free form has been used for analytical purposes. The method used to measure lutein concentration requires chlorophyll a., which can be extracted from plant sources such as spinach or algae. Lutein has been shown to have an epoxidase activity and is a model system for studying other carotenoids such as β-carotene, lycopene, and zeaxanthin. Long-term toxicity tests on lutein have not been conducted; however, it has been shown to be nontoxic when injected
