Description :Glycation is a non-enzymatic reaction that occurs when a sugar molecule reacts with a protein or lipid, usually at the amino acid level. Glycation end-products are thought to be important in the development of age-related diseases such as cataracts and diabetes, as well as in the formation of atherosclerosis. Pyridoxamine is an enzyme that breaks down glycation end-products and prevents them from building up. The 6-methyl group on this molecule may be responsible for its ability to inhibit glycation reactions, as it can react with sugar molecules to form methylglyoxal.
