Description

3-(5-Nitro-2-furyl)acrylic acid is a preservative that has been shown to inhibit the growth of bacteria, including typhimurium and aerobacter. It binds to amide groups in proteins and inhibits protein synthesis, which leads to cell death. This compound also inhibits the production of p-hydroxybenzoic acid, an important precursor in the synthesis of DNA, RNA and proteins. 3-(5-Nitro-2-furyl)acrylic acid has genotoxic activity and is carcinogenic with respect to animals.
