1-(Palmitoyloxy)-3-(stearoyloxy)-2-propanyl (9Z)-9-octadecenoate is a fatty acid that has been used in analytical chemistry as a surface methodology. It is an intermediate of the lipase-catalyzed reaction of diacylglycerol with palmitic and stearic acids. This reaction produces 1,3-dipalmitoyl-2-palmitoyloxypropanoyl (8Z)-8-octadecenoate and 1,3-dipalmitoyl-2-(stearoyloxy)propanoyl (8Z)-8-octadecenoate. The polymorphs of this compound are very sensitive to changes in temperature, pH, and concentration.
