Description :
(Z)-8-Tetradecenal is a dilute substance that is used as a food additive to provide a pleasant taste and aroma. It can be found in the essential oils of fruits such as oranges and lemons, as well as in some alcoholic beverages. This substance has been shown to have antioxidant properties, which may be due to its ability to scavenge reactive oxygen species (ROS) or inhibit lipid peroxidation. The antioxidant activity of (Z)-8-tetradecenal may also be due to its ability to inhibit the formation of α-terpineol from α-pinene by reacting with it spontaneously. This substance is not considered toxic and does not appear to pose any risk for human health at the levels consumed.
