- Sucrose phosphorylase
Sucrose phosphorylase is an enzyme that catalyzes the conversion of sucrose to glucose and fructose. Sucrose phosphorylase is found in a wild-type strain of Leuconostoc mesenteroides, and has been used for process optimization, kinetic studies, and reaction mechanism studies. The enzyme is involved in the following reactions: Sucrose + ATP → ADP + D-fructose + D-glucose ADP + D-glucose → ATP + D-glucose 6-phosphate The enzyme's biological properties have been studied using intramolecular hydrogen transfer inhibition, which led to the discovery that it is a phosphorylase. Sucrose phosphorylase's activity has also been shown to be transcriptionally regulated by cAMP and its cellular function is sugar transport.
