Carboxypeptidase G from pseudomonas sp. is an enzyme that catalyzes the hydrolysis of carboxylate groups and amides, which are contained in proteins, peptides, and other organic molecules. The expression of this enzyme is constitutive and it is present in all cells at a constant level. Carboxypeptidase G from pseudomonas sp. has been shown to be involved in the biosynthesis of anthocyanins, which are pigments found in plants that are responsible for their red or purple coloration. The reaction mechanism involves the formation of an intermediate iminium ion between the carboxyl group of a substrate and the hydroxide ion (OH-). This intermediate is then protonated by water to form an acylium ion, which reacts with another molecule to form an amide or carboxylate product.
