2-Ethyl-6-hydroxybenzoic acid is a natural compound that is a propionylated multidomain molecule. It catalyses the formation of an acid from a fatty acid in model systems. This process involves the conversion of the fatty acid's carboxylic group to an alcohol, followed by a second reaction that converts this alcohol to an acid. The regiospecificity of this reaction has been shown using 3-nitrophthalic anhydride as the substrate and 2-ethylhexyl palmitate as the product. This type of reaction was also found in the biosynthesis of fatty acids in yeast cells, where it was called synthetase activity. 2-Ethyl-6-hydroxybenzoic acid can be converted into its analogs, such as 3-(2'-ethylhexyl)phthalide or 3-(3'-methylpentadecyl)phthalide, which are used in industrial applications.
